How do you cook cornbread in a cast iron wedge pan over an open wood fire? - cast iron camping

We are afraid to burn to the bottom and the top is not. We have a lot of camping and I am learning, corn bread made of cast iron wedge bread we were cooking.

Like a pancake:

1 cup cornmeal
1 cup flour
Sugar 1 / 4 cup
1 teaspoon baking powder
1 egg
1 cup milk
4 tablespoons butter, melted

Melt the lard (or oil) in an iron pan. In a large bowl combine dry ingredients. In a second bowl of eggs with milk and butter. In the dry ingredients and stir until just moistened. Cook over low heat until bubbles begin in the dough. Use a metal spatula, turn the corn bread, and cook carefully until toothpick comes clean when inserted into corn bread.
Cable Corny Bread - Add 1 / 4 cup corn kernels (fresh, canned or frozen as) to the ground.
Cheddar Cheese Corn Bread - Add 1 / 4 cup shredded cheddar cheese into the dough.
